Impossible Pumpkin Pie

Who doesn't love a pumpkin pie?  Especially one so simple to make because you do not have to make a crust.  That's right.  I said you don't have to make a crust for this one. The key to this impossible pumpkin pie is the Bisquick baking mix in the batter. Another feature of this recipe is the full fat coconut milk.  It adds such a creamy texture, you are going to want to have seconds.

Impossible Pumpkin Pie

what you will need:

  • 3 large eggs
  • 1 15 ounce can pumpkin puree
  • 1 cup full fat coconut milk
  • ½ cup Bisquick baking mix
  • 2 tsp vanilla extract
  • ¾ cup light brown sugar
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1½ tsp pumpkin pie spice

how to make it:

Heat oven to 350°F. Grease a 9" or 10" pie pan.

Place all ingredients into a blender. Beat on High for 1 minute. Pour batter into pie pan.

Bake until knife inserted in center comes out clean, which should be approximately 50 to 55 minutes. Cool and serve.
